Easy & Fast Clean Eating Salmon Meal Recipe
This easy & fast dinner is perfect for weekdays when you want to eat healthy, but don’t want to do a lot of work. Save even more time by purchasing pre-cut veggies or doing a little meal prep on the weekends.
Take a large piece of foil and lay it flat on a baking sheet. Preheat your oven to 400º (alternately, you can turn your grill on instead)
Place your choice of veggies (we recommend zucchini, squash, asparagus, broccoli, eggplant, or any other hardy vegetable- don’t put greens, they will burn too quickly) in a bowl. Add garlic and onions if you like. Drizzle olive oil, salt and pepper. Mix well. Place the veggies in the center of you foil sheet. Place a fillet of wild caught Alaskan salmon on top of the veggies. Place a few slices of lemon on top of your salmon. Drizzle a little olive oil on the fish. Fold the outer sides down over the veggies and fish, then fold the top and bottom sides, and roll to create a little packet. Place the baking sheet in the oven. Bake for 25 minutes.
