Make Your Own Healthy Pesto Sauce
Pesto is a healthy and delicious sauce that you can add to poultry, fish, vegetables, pasta, or rice dish. Or spread it on toast. Rather than buying jars of pesto with preservatives, you can make your own at home with a blender or food processor. You can swap out the pine nuts for walnuts or another nut of your choice. You can also add other greens to your basil. Be creative.
In a blender or food processor, combine 2 cups of Basil- stems removed, 1 cup of Kale or Spinach- stems removed, 3 large cloves of fresh garlic, 1/4 cup of pine nuts, 3/4 cup of Olive Oil, and 1/2 cup of grated parmesan cheese. Pulse until it’s smooth. Add more Olive Oil if needed. Enjoy!! It can be kept in the refrigerator for up to a week, or six weeks in the freezer.
