The Truth About Kombucha
Kombucha isn’t made from mushrooms.
Kombucha is brewed with a SCOBY. Many people erroneously think that it’s a mushroom. A SCOBY stands for “symbiotic culture of bacteria and yeast”. So that thing on top of the barrel that looks like a mushroom is actually just bacteria and yeast forming together. It’s then made with black tea and sugar. These things all ferment together to produce the acidic and fizzy drink of kombucha.
